Christmas Enchiladas

OK all you pups out there in Blogville, gather around and take notes. We had the most perfect Christmas dinner ever and I'm going to tell you how to make it so you can have some too.
First Mom cooked a big pan of rice. While it was cooking she cut up some turkey and threw the pieces in with the rice. Then she baked a sweet potato and when the rice was done she mashed up the potato and stirred it into the rice.
When it was all mixed up, she put the potato, rice mixture on some tortillas.
Then she rolled them up and put them on a pan.
She put some cheese slices on top and put them int the oven till the cheese got all melty.
When they cooled down a little, Dad cut them into slices, 20 slices.
We each got two slices of enchilada on our dinner.
The little girls ate upstairs with Dad but if you want to know how they tasted, here's a look at us eating our Christmas enchiladas.
After about two minutes here is the empty pan.
And here are our empty bowls.
Mom got this idea from Dr B. When my tummy was sick a couple weeks ago she fed me rice. Dr B told her to put a little sweet potato in with the rice. He said it would taste better and was good for my tummy. Mom thought it would make a good treat and added the tortilla and cheese. She says it's an easy and healthy treat so we can have it again soon. We can't wait.

Oh goodness, don't tell my pack, the only humanish treats they get are raw fruits and vegetables, and not many of those. Their favorite is barnana (named for Barney, he loves his Barnanas).

OMD, you guys are SO LUCKY!!!
Yummers indeed!! I never gets homemade stuffs (this might be because Ma almost never cooks..bol)
Butts, wows, that looks DELISH!!
Does the sweet potato work like pumpkin? Ma wants to know cause I won't eat pumpkin anymores (I had to eat WAY too much as a puppy, and I really don't like it anymores...)
This would be a good alternative!

Just catching up after a week of insanity (and another such week on the way). It looks from your Christmas Eve post as if the little girls are getting along better. And Santa brought a fine box of toys for all of you. Mom's Christmas Enchilada Feast was inspired and splendid! Happy New Year, all of you!
